Quick Beef Ragu

Hello! This is a family favorite in my household and it is great for a weeknight meal since it’s pretty quick to make! AND for a plus there are veggies diced small in the sauce so it’s great for your picky veggie eaters! Let’s get started!

INGREDIENTS:

  • 4 Slices of Bacon
  • 1 Tablespoon oil
  • 1 small onion (diced super tiny)
  • 2 carrots (diced super tiny)
  • 1 celery stick (diced super tiny)
  • 2 garlic cloves (minced)
  • 1 lb ground beef
  • 4 oz mushrooms (diced super tiny)
  • 1 tsp Italian seasoning
  • 15 oz petite diced tomatoes
  • 15 oz tomato sauce
  • 1/2 cup beef stock
  • 1/4 cup tomato paste
  • 1/4 cup fresh chopped parsley
  • 1/4 cup romano cheese (or however much you’d like)
  • 16 oz pasta (Your choice! I suggest a small pasta though, like penne)

INSTRUCTIONS:

  1. Heat a large non-stick skillet over medium heat.
  2. Dice the bacon into small pieces and cook until mostly done. Remove from the pan and set aside on a plate. LEAVE the drippings in the pan.
  3. Start your Pasta!
  4. Add your onions, carrots, mushrooms & celery and cook, stirring frequently for about 4-5 minutes.
  5. Add in the garlic and stir for 30 seconds, or until nice and fragrant.
  6. Add in the ground beef and italian seasoning and cook for about 10 minutes, or until the beef is browned, stirring frequently.
  7. Stir in the diced tomatoes, tomato sauce, beef broth, and tomato paste and allow to simmer for 10 minutes.
  8. Finish up your pasta and you’re done!
  9. Throw some pasta on your plate and cover it with your delicious sauce!
  10. Sprinkle with freshly chopped parsley, grated romano cheese & bacon.
