Hello! This is a family favorite in my household and it is great for a weeknight meal since it’s pretty quick to make! AND for a plus there are veggies diced small in the sauce so it’s great for your picky veggie eaters! Let’s get started!
INGREDIENTS:
- 4 Slices of Bacon
- 1 Tablespoon oil
- 1 small onion (diced super tiny)
- 2 carrots (diced super tiny)
- 1 celery stick (diced super tiny)
- 2 garlic cloves (minced)
- 1 lb ground beef
- 4 oz mushrooms (diced super tiny)
- 1 tsp Italian seasoning
- 15 oz petite diced tomatoes
- 15 oz tomato sauce
- 1/2 cup beef stock
- 1/4 cup tomato paste
- 1/4 cup fresh chopped parsley
- 1/4 cup romano cheese (or however much you’d like)
- 16 oz pasta (Your choice! I suggest a small pasta though, like penne)
INSTRUCTIONS:
- Heat a large non-stick skillet over medium heat.
- Dice the bacon into small pieces and cook until mostly done. Remove from the pan and set aside on a plate. LEAVE the drippings in the pan.
- Start your Pasta!
- Add your onions, carrots, mushrooms & celery and cook, stirring frequently for about 4-5 minutes.
- Add in the garlic and stir for 30 seconds, or until nice and fragrant.
- Add in the ground beef and italian seasoning and cook for about 10 minutes, or until the beef is browned, stirring frequently.
- Stir in the diced tomatoes, tomato sauce, beef broth, and tomato paste and allow to simmer for 10 minutes.
- Finish up your pasta and you’re done!
- Throw some pasta on your plate and cover it with your delicious sauce!
- Sprinkle with freshly chopped parsley, grated romano cheese & bacon.
